In this work, the authors present research on the stabilization and clarification of wine, since this is an important technological stage in production, which affects the quality characteristics of this product. The authors propose to use modified bentonite samples in wine technology as those that, in combination with clarification, reduce the acidity of wine, which allows to improve its organoleptic indicators. The work is relevant and requires further research in this direction.
